With the holiday season coming up, it’s only natural to crave some delicious dishes. Well, you may like it or not but pasta is a dish that can contain a lot of different flavors. On that note, we have discovered that pasta and red pepper have a chemistry that is surely made in heaven. So, this week we decided to go with a pasta dish that can make you lick the plate clean and leave you craving for more. Without further ado, let’s dive into the recipe.

 

Ingredients:

  • 350 grams or around 12 ounces of spaghetti noodles or linguini. You can use gluten-free noodles in case you are gluten intolerant.
  • 2 fresh red bell peppers.
  • Olive oil.
  • Salt and black pepper.
  • 2 medium shallots (finely chopped).
  • 3-4 cloves of garlic (finely chopped).
  • 1 and a half cups of almond milk.
  • 1-2 tbsp of cornstarch.
  • 1 pinch of red pepper flakes.

 

Cooking Method Steps:

1: Roast the Peppers:

  • Cut the red bell peppers into half and roast them for 30 mins (preferably in an oven).
  • When done, cover them with foil paper for 10 mins to steam.
  • Then peel away the burnt and blackened skin and remove the seeds and stems.

2: Cook the Pasta:

  • Take 350 grams or around 12 ounces of spaghetti noodles and cook them according to the package instructions. You will know it’s ready when it gets that soft and moist texture.
  • When done, add 1-2 tbsp olive oil to the pasta and toss it around a bit.
  • Then cover the pasta so that it remains warm for a while.

3: Saute the Garlic and Shallots:

  • Take a frying pan and spread 1-2 tbsp of olive on it.
  • Heat the oil on medium heat. Then add the finely chopped garlic and Shallots.
  • Saute them properly until they get a golden-brown color.
  • Season them with a little bit of salt and pepper and keep stirring the whole time.

4: Make the Red Pasta Sauce:

  • Take a blender and add the sauteed garlic and shallots.
  • Then add the roasted bell peppers and 1 and a half cups of almond milk.
  • Add a pinch of red pepper flakes and a decent amount of salt and black pepper.
  • Add 1-2 tbsp of cornstarch for thickening the sauce.
  • Now blend until it gets a creamy and thick texture.

5: Mix the Pasta with the Sauce:

  • Take a non-stick pan and place the sauce on it. Then put it on medium heat.
  • Let the sauce simmer for a bit so that it becomes thicker. Once it starts to boil a little, lower the heat and keep simmering.
  • When the sauce gets thicker enough, add the cooked pasta to it.
  • Toss it around for a while until the sauce is properly blended with the pasta.
  • Finally, season it a little more with a pinch of salt and black pepper

 

Serve and Enjoy:

Now your yummy roasted red pepper pasta is ready. Surely, you can serve and enjoy it as you please. But we will suggest you serve it with some vegan parmesan cheese and freshly chopped basil. Trust me, it really goes with the flavor.
