Craving for crispy and spicy healthy treats all at once? Then it’s a great choice if you go for mixed vegetable pakora fried in light butter. Pakoras could be made with any vegetable but it brings a tangy taste if made with mixed vegetables.
This week CafeOn brings you this recipe of Mixed Vegetable Pakora to make at home.
Ingredients
- 1 Green chilli (chopped)
- Thumb-sized piece of ginger (roughly chopped)
- 1 Tomato (roughly chopped)
- 200g gram flour
- 1 ½ tsp chilli powder
- 1 ½ tsp garam masala
- 1 ½ tsp ground coriander
- 2 Medium potatoes, peeled (thinly sliced)
- ½ Brinjal (thinly sliced)
- ½ Cauliflower (cut into florets)
- 1 Large onion (finely sliced)
- ½ Lemon, juiced
- Butter (for frying)
- Chutney (to serve)
Method
- Heat oven to 120C/100C fan/ gas 1/2. Make a paste by blitzing the chilli, ginger, and tomato together, then set aside.
- Add all the prepared vegetables and mix the gram flour with the spices. Slowly add 150ml water until the batter coats the vegetables. Vegetables should be well coated, but not swimming in it.
- Add the tomato mixture and mix well until everything is incorporated. Add a little lemon juice and seasoning.
- Heat the butter to 180C in a frypan. Take a handful of the mix and place it to ensure the vegetables stick to each other when lowered in the butter.
- Fry for about 4 mins on a low flame until golden and crispy. Add little water or gram to the mixture at this point if your tester ball didn’t hold together. Repeat, frying the remaining mixture in batches.
- Remove from the frypan and enjoy with chutney.
